Apple Cake
Ingredients
2 apples
3 eggs, at room temperature
180g caster sugar
100g salted butter, at room temperature
120g Plain yogurt
170g plain flour
1 tbsp baking powder
Pinch of salt
You will also need
24cm cake tin
Parchment paper
Method

Pre-heat your oven to 180ºC. Grease your tin and line it with parchment paper.

Peel, core and slice your apples into 8.

In the bowl of a stand mixer (or using hand-held electric whisks) whisk the eggs and the sugar until pale.

Add the butter and yoghurt and whisk until fully combined.

Sift the flower, baking powder and salt into the mixture. Using a spatula, carefully fold in. Take care to retain as much air as possible.

Pour the batter into your prepared tin.

Place the apple on top and gently press down with the help of a spatula.

Bake in the middle shelf of the oven for 40-45 minutes (or until a toothpick comes out clean). Baking time will depend on the size and shape of your cake tin.

Remove from the oven and allow to cool for 5 minutes before removing from the tin. Place on a wire rack and allow to cool completely.
