"Areias de Cascais"
Makes 40 - 50 depending on the size
Ingredients
300g plain flour
200g salted butter, at room temperature
100g caster sugar + to cover
You will also need
A food processor
A baking tray
Parchment paper
Method

Preheat your oven to 180°C. Line a baking tray with parchment paper.

Place all ingredients in a food processor and blitz for 30 seconds.

Place the dough on a clean surface and bring it together with your hands.

Using your hands, shape the dough into small balls. I like them quite small so you can have them in one or two bites. Take into account they will grow slightly when baking.

Place in the oven and bake for 15 minutes.

Once baked, place in a bowl with caster sugar and fully coat each cookie.

Place on a wire rack to cool and harden.

These cookies will store in an air tight container for a few days.
