Broccoli Pesto Pasta
Serves 4
Ingredients
275g dried pasta of your choice
100g broccoli florets
25g basil leaves
1 small garlic clove, peeled
2 tbsp extra virgin olive oil
1 cup parmesan cheese, grated. Plus extra to serve.
Salt to taste

Food processor or stick blender
Method

Bring a large pot with water to the boil. Add a good pinch of salt.

Add the broccoli and cook for two minutes. Do not drain the water! Using a slotted spoon, remove the broccoli and run under cold water.

Bring the water in the pot back to a boil and add the pasta. Cook until al dente, about 7-8 minutes. Reserve some of the cooking water, you might need it for the sauce.

In the meanwhile, place in your food processor the broccoli, basil, garlic, olive oil, parmesan and a pinch of salt. Blitz until smooth and silky. If too thick, add some of the reserved pasta water, one tbsp at a time. Taste and adjust seasoning.

Toss the pasta with the broccoli pesto and serve with some extra parmesan on top.
