Caprese Couscous Salad

Serves 4 

Ingredients

For the salad:

240g wholewheat couscous 

150g cherry tomatoes, sliced in half 

150g mini mozzarella balls

6 slices of parma ham, sliced into small pieces

15g basil leaves, chopped

tbsp extra virgin olive oil 

Sea salt flakes

 

 

Method

  1. Place the couscous in a bowl and add 240ml of boiling water. Cover and leave to hydrate for around 15 minutes. Using a fork, loosen the couscous. Leave to cool completely and place in the fridge until ready to use. 

  2. Mix in the tomatoes, mozzarella, parma ham and basil. Using two spoons, mix all the ingredients together. 

  3. Season with extra virgin olive oil and sea salt flakes

  4. Serve cold.
