Chocolate Brownies
Makes 16-20
Ingredients
220g Dark chocolate (minimum 60% cocoa solids)
150g butter
170g caster sugar
2 large eggs, plus 1 extra yolk
2 teaspoons vanilla extract
80g plain flour
You will also need
20cm square tin & Baking parchment
Method

Pre-heat your oven to 180°C (160°C Fan if using electric oven)

To prepare your tin, line a shallow baking tin with baking parchment. (I tend to use a 20cm square tin)

Place the chocolate and butter in a large heatproof bowl. Stand it over a pan of gently simmering water to melt the chocolate, stirring occasionally. Make sure the bottom of the bowl doesn’t touch the water!

In the meanwhile, place the sugar, eggs, egg yolk and vanilla extract in the bowl of your stand mixer and mix until just combined.(You can also do this with an electric whisk).

Once the chocolate and the butter are melted, remove from heat and leave to cool for 3-5 minutes.

Gradually whisk the eggs into the chocolate mixture and beat until smoothly combined. Sift in the flour and stir in until evenly combined, using a spatula.

Pour the mixture into the tin and bake in the middle shelf of the oven for 25–35 minutes. To check if they are cooked, insert a skewer; it should come out with some moist crumbs, not wet batter.

Leave to cool in the tin for 2 minutes then remove the parchment paper and place on a wire rack to cool.

Once cool, cut into squares and serve cold or warmed through!
