Chocolate Crinkle Cookies
Makes 10 - 12
Ingredients
200g dark chocolate
150g caster sugar
100g light brown sugar
125g unsalted butter
2 large eggs
3 tbsp cocoa powder
130g plain flour
1/4 tsp salt
1/2 tsp baking powder
Sea salt flakes to sprinkle (optional)
You will also need
2 baking trays
Parchment paper
Method

Preheat the oven to 160C and line two baking trays with parchment paper.

Dice the butter and chop the chocolate and put them into a heatproof bowl.

Place the bowl over a pan of gently simmering water and stir occasionally. Once fully melted, set aside.

In the bowl of a stand mixer (or using and electric hand whisk), whisk together the eggs and sugars for around 5 minutes. Add the chocolate mixture and mix to combine.

In another bowl, mix together the cocoa powder, the flour, the baking powder and the salt. Add to the chocolate mix and whisk very briefly until combined.

Use an ice cream scoop to form the cookies, leaving space between them.

Place into the oven and bake for 12 minutes.

Allow them to cool completely.
Optional: If you want to add some sea salt flakes, sprinkle some before baking.
