Cornbread 

Makes 1 Loaf 

 

Ingredients

175g polenta, plus extra for dusting 

150g plain flour 

½ tsp bicarbonate of soda 

¼ tsp baking powder 

50g of soft brown sugar 

1tsp salt flakes 

300ml buttermilk, at room temperature 

2 large eggs 

60g unsalted butter 

Butter, for greasing 

 

You will also need

1 Large loaf tin

 

Method

  1. Preheat your oven to 180ºC/350ºF. Grease the loaf tin with butter and dust with polenta.

  2. In a bowl, sift the polenta, flour, bicarbonate of soda and baking powder. Add the salt and sugar. 

  3. In another bowl, whisk together the buttermilk, eggs and melted butter. Combine this mixture with the dry ingredients.

  4. Pour the batter into the loaf tin and sprinkle the top with a bit more polenta.

  5. Bake for 20 minutes, or until a skewer come out clean when inserted in the middle. 

  6. Remove from oven and allow to cool on a wire rack. Serve with butter.
