Crêpes

Makes 10-12

 

Ingredients

100g plain flour 

Pinch salt 

2 large eggs

350ml milk

1tbsp olive oil 

 

Method

  1. Sift the flour and salt into a bowl.

  2. In a small bowl, beat the eggs. Gradually add them to the flour whilst mixing.

  3. Once you have a paste like mixture, start adding the milk slowly. Keep stirring until all the milk is added. Add the olive oil.

  4. Once you have a smooth batter, pour it into a jug and leave to rest in the fridge for 30 minutes. 

  5. Place a non-stick pan over medium heat and brush with a little butter. Pour just enough batter to cover the base of the pan. Swirl the pan in order to cover completely.

  6. Cook for 1-2 minutes and once golden brown, use a spatula and your finger tip to flip it around. Cook for a further 1 minute and slide onto a plate.

  7. Serve with your garnish of choice.

Note: This batter can also be used for savoury crêpes.
