Basil Houmous
Ingredients
240g cooked chickpeas
50g basil leaves
1 small garlic clove, minced
2 tbsp tahini
½ a lemon, juiced
Salt and pepper, to taste
Ice cold water
To garnish:
25g roasted pine nuts
Drizzle of extra virgin olive oil
A couple of basil leaves
You will also need
Food processor
Method

Place the chickpeas, basil, garlic, tahini and lemon juice in the food processor (you can also do this with a stick blender). Blitz until finely minced. Using a spatula, scrape the sides down.

With the food processor running, gradually add water until you reach a smooth and creamy consistency.

Scrape the sides and season with some more lemon juice, salt and pepper.

Garnish with roasted pine nuts, fresh basil leaves and a drizzle of extra virgin olive oil.

Serve with raw carrot sticks, tortilla chips or bread sticks.
*Also works great as a spread for a Bruschetta with fresh tomatoes on top!
