Guacamole

 

Serves 4-6 as an appetizer

 

Ingredients

2 Ripe avocadoes

½ red onion, finely diced

1 tomato, finely diced (seeds removed)

1 lime 

Salt and pepper 

To Serve 

Corn tortilla chips

Method

  1. Peel the avocadoes and remove the stone. Place in a bowl and using a potato masher (or a fork), mash the avocadoes. I like to leave some texture to it.

  2. Juice half the lime on to the avocadoes quickly to avoid them going brown. 

  3. Add the diced onions and tomatoes, mix. 

  4. Add salt and pepper to taste. Balance with some more lime juice if needed. 

  5. Serve with some corn tortilla chips!
