Lemon Olive Oil Cake

Makes 10-12

 

Ingredients

 

3 large eggs

120g caster sugar

120ml olive oil  

Juice and zest from 2 lemons

120ml milk

250g plain flour

1tsp baking powder 

1tsp baking soda

1tsp salt

2 tsp granulated sugar 

Powdered sugar and lemon peel to decorate

 

Method

  1. Heat the oven to 180ºC fan and line a loaf tin with baking paper. 

  2. In a bowl of a stand mixer, add the eggs, sugar, olive oil, lemon juice and milk.

  3. Add the flower, baking powder, baking soda and salt. Mix until you have a smooth batter. 

  4. Place the batter in the tin and sprinkle with granulated sugar.

  5. Bake fro 35 - 40minutes.

  6. Leave to cool completely. 

  7. Decorate with powdered sugar and lemon peel.

Note: Every oven is different so use the timing above as a guide. Goes well with a spoonful of greek yoghurt.
