Mussels with White Wine & Garlic Sauce
Serves 4 as a starter or 2 as a main
Ingredients
1kg fresh mussels
3 garlic cloves, peeled and smashed
4 tbsp olive oil
50ml dry white wine
50g chopped parsley
Half a lemon
Method

Under running water, clean the mussels by removing their beards and scrubbing the shells.

Place a deep pan over a medium heat. Add the olive oil and the garlic. Cook until fragrant, around 2 minutes.

Add the mussels and the white wine. Cover with a lid and cook until the majority of the mussels open up.

Add the parsley and squeeze the lemon. Stir everything quickly and place into a serving bowl. Sprinkle some fresh parley on top for decoration.
Note: You can chop the garlic up for a more intense flavour. Coriander can also be used instead of parsley.
Also great as a main dish with a side of chips.
