Pancetta & Goats Cheese Salad

Serves 4 

 

Ingredients

For the salad:

70g smoked pancetta cubes

200g mixed salad leaves

200g cherry tomatoes, sliced in half

1 apple, chopped into small half cm pieces

100g goats cheese

Method

  1. Place a non-stick pan over low heat. Add the pancetta and cook until golden. Leave to cool.

  2. In a bowl, place the salad leaves, the cherry tomatoes, the apple and the cool pancetta.

  3. Crumble 50g of the goats cheese and add to the salad. Slice up the rest of the cheese and place on top.

  4. Serve seasoned with extra virgin olive oil, balsamic vinegar and some salt to taste.
