Prawn Chow Mein
Serves 4
Ingredients
200g Raw and peeled king prawns
2 Medium carrots, chopped into thin batons
100g Tenderstem broccoli, chopped into bite size pieces
150g Shitake mushrooms, chopped into bite size pieces
80g Sugar snap peas
1 Baby pak choi, leaves picked
1 Garlic clove, minced or grated
500g Egg noodles, cooked
6 tbsp soya sauce
4 tbsp oyster sauce
2 tbsp groundnut oil (or normal oil)
1 tsp sesame oil
Method

Place 1 tbsp oil in a large work or pan. Cook the prawns for 2 minutes on each side. Once cooked, place in a bowl and set aside.

Add another tbsp oil to the pan and add the carrots, broccoli, mushrooms and peas. Cook for 6-8 minutes or until they are cooked but still have a bite to them.

Add the garlic and the pak choi and cook for another minute.

Add the noodles to the pan and toss.

In a small bowl, mix the soya sauce and oyster sauce. Add to the pan and mix until noodles are covered with the sauce. Add the sesame oil and mix one last time.

Place in a bowl and serve immediately.
*This works well with nearly any vegetable, so feel free to add whatever you have! I sometimes add asparagus, bean sprouts or cauliflower.
