Salmorejo

Serves 4 - 6 as a starter 

 

Ingredients

1kg ripe tomatoes

100g soft white bread

1 garlic clove

150ml extra virgin olive oil 

Salt to taste 

2 Hard boiled eggs, chopped (to garnish)

4 slices of Spanish jamon serrano, chopped  (to garnish)

Method

  1. In a food processor of blender ( I use the Thermomix) , add the tomatoes (with skin and seeds), the garlic, the bread, the garlic and the olive oil.

  2. Blend until smooth. Be patient! 

  3. Season with salt to taste and blend again. 

  4. Once smooth, place in a container in the fridge until serving.

  5. Serve cold garnished with hard boiled egg and jamon serrano.
